Coconut Milk + Chocolate Shakeology = Awesome!
I know others have already posted this recipe but I had to post my endorsement because it's so delicious! Even with the new formulation that has a vitaminy taste, mixing it with coconut milk is SO good. If you mix a scoop of Shakeology with about one cup of refrigerated coconut milk, it whips up into something like a mousse or pudding. Very tasty!

The best kind of coconut milk to use is one with higher fat content. Some of them are watered down. Personally I've found Thai Kitchen brand to be very high quality and high fat. It's important to refrigerate overnight because that makes it thicker.

I know coconut is generally considered a "bad fat," but if your diet doesn't exclude it then it's worth trying. Aside from the great taste, there's lots of fat to enhance the absorption of all the fat-soluble goodies in Shakeology!

I like it with almond-coconut milk and a couple drops of coconut extract. Ridiculous! emoticon
