Christina - I bonked a lot during the first week but have since adjusted my eating habits. I try to eat frequently and will either eat a protein bar or shake an hour before the workout. That seems to have worked so far.

First of all, impressive 60 day results...but...I just want to warn you...if you eat too much protein for too long and you will lose muscle along with that fat. I'm picking up Body Beast clients who lost too much muscle on P90x. Are they ripped? Yes...but they are "skinny ripped".
Complex Carbs are where it's at. Try eating a Mutigrain English Muffin with Peanut Butter spread on top 1 hour before working out, or maybe a banana with that Protein Bar. I like the macro of 50% carb, 30% protein, 20% fat. You can eat this macro and still be at a deficit in calories lose weight and gain some muscle mass.
It has worked well for me.
