Heya, I'm looking for a tasty tilapia recipe. I searched the board but only found a few that sounded kinda interesting. Does anyone have a recipe that hasn't been posted?

this is how I have been doing mine...


line the bottom of a pan with tin foil.

Arrange tilapia on tinfoil

Thinly slice onions and place them on top of fish.

You can season them how you want, but I use minced garlic, pepper, a little cajun seasoning, sometimes a little light Italian dressing.

put another sheet of tinfoil and pinch edges, making a packet.

Cook at 350 for about 20 min or until fish is flaky.

Try tilapia fish tacos, cook tomato, unions in a pan light I can't belive it's not butter it's like 99 percent fat free and it tastes like butter add salt pepper I also put chiken base to give it little more flavor sqeese a lime when almost done, warm up corn tortillas add lettuce and fresh tomatos and enjoy, just had thesse last night there good : )

I like to brush my fish with olive oil and then a little cajun seasoning, wrap in foil and throw it on the gas grill, easy and delicious.

It has some sodium (can't remember how much exactly) but old bay seafood seasoning is absolutely amazing. Also, I found this seasoning called "what's this" the last time I was in Arkansas visiting family (it's made there). I doubt I can post links on here, but you can google "what's this seasoning" and find it. I have yet to have a bad product from them or put it on anything that tastes bad.

I've had a few ideas I want to try with Tilapia but I haven't yet. I am a culinary school graduate. But I had an idea for a bruchetta Tilapia.

Basically take diced tomatoes, basil chiffonade...or cut in strips, light balsamic vinegar, and a little minced garlic. Mix all of that together. You can cook your tilapia however you would like..baked, grilled, poached, steamed....whatever you like. I would prefer wrapping it in foil with pan spray and seasoning it with kosher or sea salt and pepper. Bake on 400 for about 15 to 20 minutes and then when its done top it with a few tablespoons of the Bruschetta.

Also if you don't really like that idea, You could do baked it on a sheet tray with pan spray..season the fish with salt and pepper. Top the fish with a small dice of tomatoes and mint. Then mix a little white wine and lemon juice and spoon a little of the fish as your baking it. I've done this with red snapper at the fine dining restaurant I worked at.

Tip- if you're gonna use salt use kosher or sea salt.

I'm also interested in any other recipes that anyone is willing to share. emoticon

Blackened Tilapia is really good. Use EVO and some off the shelf blackening seasoning and you are good to go.

Parmesean crusted tilapia

•1/4 cup Parmesan cheese
•2 tablespoons butter, softened
•1 tablespoon and 1-1/2 teaspoons mayonnaise
•1 tablespoon fresh lemon juice
•1/8 teaspoon dried basil
•1/8 teaspoon ground black pepper
•1/8 teaspoon onion powder
•1/8 teaspoon celery salt
•1 pound tilapia fillets
DIRECTIONS
1.Preheat your oven's broiler. line pan with "release" non sick aluminum foil.
2.In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Set aside.
3.Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2-3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2-3 more minutes or until the topping is browned and fish flakes easilywith a fork.

SUPER SIMPLE

1 1/2 TB Honey
2 TB Dijon Mustard
1/4 cup bread crumbs
1/4 cup chopped pecans
2 TB chopped fresh parsley


Place fish on baking sheet lined with tin foil sprayed with non stick spray.

Mix together honey & mustard heat in microwave for 15 seconds.
Brush on fish.
Combine bread crumbs, pecans and parsley. Spoon over fish.
Bake at 450 for 8-10 minutes until fish flakes easily when tested with fork.

I usually serve with steamed broccoli & brown rice.

I love fish tacos. I am not a huge fan of tilapia as I do not think it has much flavor. My wife does not like "fishy" fish, so i came up with a totally different recipie for them.

Here is the blackening spice

Equal parts garilic powder, onion powder, paprika.
Half part of black pepper
One fourth part red pepper

I saved an old spice bottle and make my season mix in it.

I dont measure anything, but that is close. So i am clear, if itis 2 teaspoons of garlic, 2 of onion powder and 2 of paprika, than its 1 of black pepper and half a teaspoon of red pepper.

I cook this outside in a grill, in a pan. Get a pan very hot, i like to use a little olive oil, and a teaspoon of minced garlic. Then drop the fish on the pan. Turn down the heat to about 3/4. While that side sears in garlic, liberally cover the other side with the mixed up seasoning. When you flip the fish it will blacken.

For the greens part, take 4 zucchini and shred them shoe string style on a mandolin, or cut them into thin stips. Inuse a small can of sliced black olives, about a cup of fresh copped basil. Put that in a bowl. I por a small amout, maybe a quarter cup of olive oil on it, 2 heaping teaspoons of minced garlic, and 2 teaspoons of crumbled blue cheese. Mix it all up.

When the fish is done, i use a low card, wheat tortilla, fish and some of the zuchini mix. It is really good.
