Recipes for eating clean
9/12/10 4:26 PM
Ok, so most of us that start a beachbody program, whatever it may be, want to be fit and live a healthy lifestyle. 80% of our success is what we eat. I don't know about all of you, but I LOVE food. I love to eat and I want to enjoy what I eat. Most of all, I want to pass on healthy eating habits to my kids.

Tuesday night, I was in the chat room listening to Tony Horton answer questions and generally just to see what he had to say. I was shocked to find out that some of what I'm eating is in his "world" not acceptable. Like my Kashi Go Lean, ketchup, mayo, Quaker Oats and his "nothing with a face" mentality. So lets get something VERY CLEAR. Tony is extreme, this is his lively hood and he gets paid to be a FITNESS KING. Rightfully so, he has earned it. But most of us can't and don't eat like him. We have kids, we have jobs, other than being a fitness king, and we don't have the money to eat what he eats. Who can affort to order wild salmon from Alaska and grass fed beef or bison from where ever? I've looked into it. $24 per lb.!! I have 5 kids, do you know how much $$ I'd be spending on meat every week?!! So I would like to start a recipes thread for us "regular" people. Good healthy food that has super flavor, FOLLOWS THE P90X FOOD PLAN, and won't break the bank when shopping. Here is my first recipe:

1 can regular V8 juice
1 can chili beans
2 lbs ground sirloin.
cayenne pepper to taste

brown the meat and dump everything into a crock pot on low. Let it simmer for a few hours.
ready. It's an all in one meal and tastes yummy! I put a little fat free cheddar on mine and eat it with my avacado. PERFECT!

If you like it soupy, then add another V8. If you need more, just double the recipe.

You can use regular ground beef or ground turkey. But it's simple, easy, and very inexpensive.

I would love to see other recipes here as well. I think we can all use a little bit of help in this area. Happy eating!!

MANGO CHICKEN

Here is my next recipe. I got this one from a weekly beachbody e-mail that I receive. I've made it SEVERAL times and it is one if not my most favorite!!

MARINADE
1/4 cup lime juice
2 Tbsp oil
3 cloves garlic
2 tsp chilli powder
1/2 tsp salt
1/4 tsp cayenne pepper MIX AND SET ASIDE.

cut several boneless/skinless chichen brests into 1-2 inch chuncks and place in a large zip lock. pour 1/2 of marinade over chunks and let sit for 20 min.

Add 2 tsp honey to remaining marinade and set asside.

cut onions, red pepper and mangos into 1-2 inch chunks.

take chicken, onion, pepper and mangos and skewer them, place on grill, brush with remaining marinade, and cook until done.

I always make a bit more so I have leftovers. I'll place the cold leftovers in a nice bowl of fresh spinach for a divine salad the next day!! Just so good.

A little cooking tip. Using tobasco, chilli powder, cayenne and other "spicey" spices has been shown to increase your metabolism for a few extra hours after eating. So ad your spice when you can for a little extra umph in your diet!

Diamond, your great!! You need to let me know how you like them!! Just so you all know, I have 5 kids and ALL of my kids eat everything that I make. For some of them, these are their favorite foods!! I'm a big believer in the family dinner. I'm also a huge believer that what I'm eating needs to taste GOOD. I would NEVER make and feed my family something that I find distasteful, so rest assured, all the recipes I post are tried and true with children!!

My next recipe is one found in the P90X food guide. I will post it for those of you that are on a different program and don't have this book. It's called:

ISLAND PORK TENDERLOIN

1/2 tsp salt
1/4 tsp pepper
1/2 tsp chile powder
1/2 tsp ground cumin
1/2 tsp cinnamon

mix together and rub on a 16 oz pork tenderloin

heat 1 Tbsp olive oil in skillet over med high heat and brown pork, turning, about 4 min. remove and place in roasting pan.

mix 1/4 cup brown sugar & 1/2 Tbsp fresh garlic & 1/2 Tbsp tabasco sauce. pat this mixture onto top of tenderloin.

Cook in the oven for 20 min at 350 degrees.

This is sooo good and your house will smell like cinnamon long after it's done cooking. Because I have smaller children, I do not add the tabasco sauce. Another tip...... DON'T COOK THIS ON THE GRILL! It doesn't taste the same. It actually tasted pretty bad on the grill. Cook it in the oven per the directions. I just made this last night. I always double the recipe and freeze the extra tenderloin for a quick fast meal for one of those days where there just doesn't seem to be enough time in the day!!!

ENJOY!!

Diamond, I wish more people were as adventurous as you. I hope that others will post their recipes on here. I'm always up for new things to eat!!

So my next recipe is mainly one that only I eat. When I'm in a pinch, and I have those days when homework, swim practice and band practice collide, I'll feed the kids ham or turkey sandwiches and I will whip this up for me:

CRASIN/TUNA SALAD

one 6.4 oz of starfish tuna in packet
1 tsp of light mayo, put in a REALLY BIG BOWL AND MIX.

1/4 cup onion
some red pepper cut into little bits
2 stalks of celery, cut into little bits, some cucumbers

and here is the star of the salad... a small handful of crasins. Just enough to get 3 or so in each mouthful. I know what your thinking. I was in a crazy mood one day and just thought I would try it. Something different. WOW! They taste so good in a tuna salad!! Just try it. And for those of you that work, this is a good lunch to pack and bring with you. The taste of the raw onion, the tuna and the crasins are just yummy! I promise you won't be dissapointed!

ENJOY!!

This next one is really good. My sister owns a restaurant in Ohio and when I was out there this summer for a visit, I couldn't believe how yummy it was for a franchise owned meal. And It's 100% P90X perfect!! Only for those of you who like cottage cheese.

2 medium size 100% whole wheat tortillas
(each one is 100 cal. or you can use one giant one that is 200 cal. I like to use 2, tricks my mind into thinking I'm eating more than I really am.)

take 1 cup 1% low fat cottage cheese and divide between the two. so 1/2 cup on each tortilla. You may want to use less, I'm all about a thick messy sandwich.

take large whole spinach leaves and lay them accross the cottage cheese. Be generous, spinach is good for you!!

Get 6 oz of sliced turkey and divide putting 3 oz on each tortilla. Depending on how you divide your protien portions for your day, you can add less if you like.

slice up some red onions really thin and lay them on the turkey. Be generous with these as well, they ad the most wonderful flavor to the cottage cheese.

Roll or fold and eat!! This is just so good!! Make sure you have a napkin!

Enjoy!

Glad I found this thread. I'm a bit of a recipe junkie! LOOOVE finding new ones! I am anxious to try the Pork Tenderloin recipe. Sounds yummy!

One of my absolute favorite quick and easy lunches (because I generally these ingredients made up and in my fridge) is:

Black Bean and Rice Bowl
1 cup (or less) of brown rice (I generally use wehani but brown works great too)
1/2 cup of black beans,
Chop up some veggies (cherry or grape tomatoes, onions or green onions, peppers, whatever veggies I have available...the more the merrier)
Add some salsa.

Stir it all together and microwave for a minute or two. Put a little avocado on top after it's warm, if available. Enjoy! It's yummy, nutritious and you can customize it to your liking for the veggies and salsas. We've tried pineapple salsas, black bean salsas, and regular tomoto salsas. Whatever you want.

Anyway, hope everyone will keep the recipes coming.

If you're at all like me and aren't a very creative or adventurous cook (not likely to try to create my own recipes all the time), then check out your library and search for books on "clean eating," "eating clean," etc. There are many great ones with lots of variety! Gives you a good way to "try before you buy" too!

Daybyday, thanks for that. I have been eyeballing some peach salsa in the grocery store for some time but just didn't know quite where to use it. I've put it on my list along with the rice and black beans. I will try your black bean rice bowl later this week for lunch and let you know my thoughts. It sounds delish!! Thanks for posting!

Not a fan of cottage cheese so I won't be trying that one...but the black bean...YES! Love that. Thanks for posting. Made the Tuna Salad and it was delish!!!!! Thought I would have some for lunch today but my son was such a huge fan that he had it for Bfast. Go figure- Anyway I love all of these...have printed them out and put them in sheet protectors. My son said as he got out of the car for school this morning...Mum (he goes to a British School) when will they have a recipe that involves crab meat or steak? Don't know why he said those two items but if there is any clean eating that involves either of those two items, PLEASE POST.
Looking forward to the next one-

OK PEOPLE...this next one is a doosy! It takes about an hour from start to finish. It is a JAPANESE CURRY dish. We have lived all over asia, so my kids LOVE, LOVE, LOVE asian food!! So this one might not fly with your families. And it's got a bit of a kick to it, but it is SO, SO GOOD!!

JAPANESE CURRY

First, get your rice going. My kids prefer Jasmine rice, so I don't eat the rice, but that should be the first thing you get started.

Get the biggest fry pan you have. BIG. Put a few Tbsp. of olive oil in and start heating it up on low heat. Cut up one giant onion, throw it in the oil and carmalize the onions. Should take about 20-30 min.

While onions are cooking, get a sauce pan to make your roux. Mix:

3 Tbsp butter
dash black pepper
1/4 cup flour
2 Tbsp curry powder
1/4 tsp cayenne
1 Tbsp ketchup
1 Tbsp worcestershire

mix this all up on medium heat. It will start to look like cookie dough (different color though) keep mixing for a few minutes until it starts to "crumble". Or a bit dry looking. set asside for later.

I use a whole bag of boneless/skinless chicken breasts, cut them into 1 inch pieces, throw them into a glass pan and bake them at 350 until they are done, about 20 min. I used to use Japanese Panko bread crumbs, but the baby doesn't like those. So I stopped breading my chicken.

by this time, your onions should be ready. ADD TO ONIONS:

4 cups water
1 cup apple sauce - I use the small individual cups they sell for school lunches!
dash of salt
1 tsp curry powder
4-5 large carrots skinned and cut into 1 inch pieces

Cook on med/high heat and let simmer until carrots are done. When they are soft enough to stab with a fork.

When carrots are done, grab a ladel and your roux. Put 2 cups of the liquid from the carrots into your roux and mix smooth. When it's smooth, pour it back into carrot mixture. Gently stir and mix while it simmers about 5 more minutes.

You are done! Layer the rice, chicken, the carrots and curry sauce and your ready to feast. I don't cook the chicken in the curry because two of my kids don't like the spicey of the curry. You should have plenty of leftovers for a delish lunch the next day. I know this is a bit involved, but SO WELL WORTH IT.

Diamond, I'll get a steak one out soon. I'm at a loss with the crab though.

Enjoy!!

YOU GUYS SO CRAZY!! Yes, these are recipes you can use with ANY program. Lets not loose sight of the fact that the programs are only for 90 days, it's a push start for you to head in the right FOOD direction. You still need to eat "clean" and healthy long after your program is finished. These are all super meals that fall within all the food plans that will feed your body what it wants and needs.

This next one is a simple little snack/dessert. It is suppose to have an ice cream consistancy when it's done, but I think it's more of a smoothie. AND MY KIDS LOVE IT!!

BANANA BLENDER SMOOTHIE

1 frozen ripe banana chuncked into blender
1/3 cup skim milk
2 Tbsp non-sweetened cocoa powder
1/2 tsp vanilla
sprinkle of stevia to sweeten

I HATE STEVIA, I think it has the worst after taste, so here is what I do to let my kids make it "special" for them. You know those colored sugar sprinkles you can use to decorate sugar cookies, I let my kids pick a color and give a shake of sugary color into their shake. One of my girls likes to add a spoonful of crunchy NATURAL peanut butter to hers. You know it's good when your 3 year old drinks it all and asks for more!

Another quick tip, BEFORE YOU PUT YOUR BANANAS IN THE FREEZER, PEEL THEM, THEN STICK THEM IN A ZIP LOCK. TRYING TO PEAL A FROZEN BANANA IS LIKE TRYING TO GIVE MEDICINE TO A CAT! NOT FUN!

NEXT! This is for all you steak lovers out there. SO EASY, SO FAST, AND PACKED WITH FLAVOR!!!

You can really use any beef cut if you want, but I prefer sirloin as it is quite tender and is very lean.

Cut your steak up in 2 inch squares. get a bottle of Franks Original Hot sauce. Put your steak cubes and the hot sauce in a zip lock and let them marinate for a few hours in the fridge.
Just before your ready to take them out. Cut up some red and green pepper and some onions in kabob size. Mushrooms go well here too!! Alternate everything on some skewers. Go cook them on the grill and WHALA...YOUR READY TO EAT IN NO TIME! Don't over cook the beef. Just a few minutes on each side should do the trick. Meat will still cook for a minute or two even after you take them off the grill. Place them on a dish and cover with aluminum. Serve with a baked or sweet potato. THIS MEAT FLAVOR WILL KNOCK YOUR SOCKS OFF!! SO GOOD!!

Notice how most of my recipes have a "spicy" ingredient of some kind? Remember my tip from earlier?

I'm really glad you are all enjoying my recipes, but I sure do wish others would share. Or at least weigh in and let me know if you tried them and liked it or not.

ENJOY!!

YES YES YES....This will make my son so happy. Your recipies are very kid friendly as he likes to cook with me. We are already scheduled to do the banana smoothie but I think will just have to add this as well for dinner. Awesome. He has been asking for one of your steak recipies so this is right on time. I'm not a cook so I don't have any recipies to share. I was a processed foods, microwave cooker. But watch out...I'm a chef these days!
Thanks as always,
