Halloween Cat "Shakeology" Cookies

For those of us who want to better implement health in our kids lives without them feeling deprived of the occasional 'sweet treat', I had a light bulb mom moment! Seeing as baking with Shakeology would destroy some of the nutrient dense qualities we want to benefit from I put a new spin on the no bake cookie recipe using Chocolate Shakeology, and my critic agree (6) and  that these cookies ROCK!!
 * 2 cups white sugar or I prefer 1 1/2 cups of xylitol or Truvia
* 1/2 teaspoon salt
* 1/2 cup butter
* 1/2 cup milk
* 1/2 cup natural peanut butter
* 3 cups rolled oats
* 1 teaspoon vanilla extract
* 1 scoop of Chocolate Shakeology



1. In a medium/large saucepan, over med. heat, combine the sugar, salt, butter and milk. Bring to a boil, then boil for 1 full minute. Remove from heat and stir in the peanut butter, oats and vanilla. Using a candy thermometer wait until temp drops below 180* or just until it feels at room temp and then add your scoop of Chocolate Shakeology. Immediately drop by spoonfuls (I use an ice cream scoop) onto waxed paper. Decorate with candy corns etc.  Let stand until completely cool and smile as your kids enjoy a special treat, okay you can have one too!

Who doesn’t love peanut butter oatmeal bars? Yum! But with all those nasty calories, don’t treat yourself too often unless you make them the new and healthy way!With Shakeology, you can have chocolate peanut butter oatmeal bars that are good for you. That’s right, healthy treats! Great to have as a mid-day snack or pack in your child’s lunch box as dessert!

Yum! Shakeology chocolate peanut butter oatmeals bars are my new favorite treat! Here’s how to make them. It’s easy and you will be healthier for eating these sweet treats.

Ingredients:3 cups oatmeal
4 scoops chocolate Shakeology
1 tsp unsweetened cocoa powder (optional)
dash of cinnamon
1/2 cup natural peanut butter
1 cup skim or almond milk
splash of vanilla

Preparation:

Mix the dry ingredients. Blend in milk and vanilla. Add the peanut butter and mix by hand. Pour this yummy mixture into an 8×8 pan and press flat. Refrigerate for 2-3 hours, cut into squares, and eat!  Enjoy!

Fall Apples with Greens, Walnuts, Blue Cheese and Balsamic Vinaigrette

Fall Apples with Greens, Walnuts, Blue Cheese and Balsamic Vinaigrette

For the vinaigrette:

1/2 teaspoon finely chopped shallots
1 teaspoon balsamic vinegar
1 tablespoon olive oil
salt to taste
freshly ground black pepper

For the salad:

3/4 cup red or green leaf lettuce, washed and torn into bite-size pieces
1/8 of an apple , cored and sliced (peeling is optional)
2 teaspoons chopped walnuts
1 tablespoon crumbled blue cheese

For the vinaigrette:

1. Place all the ingredients in a container with a tight-fitting lid. Shake well.

2. Add the salt and pepper to taste.

For the salad:

1. Toss the lettuce and apple with the vinaigrette in a bowl.

2. Transfer to a serving plate and sprinkle with the walnuts and blue cheese.

 

Serving Size: 1 cup of salad with 2 tablespoons of vinaigrette

Sheryl Crow spent a few minutes talking to Giuliana Rancic on the red carpet at the Grammy Awards yesterday, and rather than just asking her what she was wearing (or her favorite karaoke song, which, with most celebs, Giuliana went ahead and sang with them), Giuliana quizzed her on her workout habits.

Berry Smoothie

INGREDIENTS (Nutrition)

  • 1/2 large banana, cut into pieces and frozen
  • 2 large fresh strawberries, rinsed and sliced
  • 1/4 cup blueberries
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons vanilla yogurt
  • 2 ice cubes

DIRECTIONS

Place the banana pieces, strawberries, blueberries, milk, vanilla extract, yogurt, and ice cubes in a blender. Blend until smooth.
